Silverbeet is one of the easily available vegetable in New Zealand. It is available in both red and green stems. In other places it is called Swiss Chard.
1 bunch silverbeet, finely chopped
1/4 cup grated coconut
2 garlic cloves, crushed or chopped
1 onion, chopped
4-5 green chillies, chopped
1 tsp mustard seeds
few curry leaves
1 tbsp oil
- Heat oil in a pan and splutter mustard seeds.
- Add curry leaves, garlic, onion , green chilles and saute. Then add chopped silverbeet and stir for few minutes.
- Add the grated coconut and salt,stir and cook it covered on a low-medium flame for 5 minutes.Uncover and stir fry until dry.Serve with rice.
