Easy to prepare simple brinjal/ eggplant stir fry…
2 big brinjals
3-4 green chillies, slit
1/4 tsp pepper powder
1/4 tsp turmeric powder
1/4 tsp garam masala
- Wash and cut brinjals into lengthwise pieces.
- Heat oil in a pan, add green chillies and curry leaves and fry for 1 minute.
- Add sliced brinjal pieces, turmeric powder and salt and saute for 5 minutes.
- Cover and cook for 2-3 minutes. Add pepper powder and garam masala and stir fry for few minutes. Serve as a side dish for rice….
