Ingredients:
3 hard boiled eggs, cut each into half
2 onions, finely chopped
3 green chillies, slit
1 tomato, chopped
2 sprigs curry leaves
1 tbsp coriander leaves, chopped
1 tsp coriander powder
1/4 tsp turmeric powder
1/4 tsp garam masala
1/2 tsp pepper powder
1-1 1/2 cup coconut milk
1 tbsp oil
salt
Preparation:
- Heat oil in a pan, add chopped onions, green chillies, tomato and curry leaves and saute well.
- Add coriander powder, turmeric powder, salt and 1/2- 3/4 cup water and cook for few minutes.
- Add coconut milk, garam masala, pepper powder and coriander leaves, mix well and bring to boil.
- Add boiled eggs and cook for 1-2 minutes. Remove from fire and serve hot…

Thanks for your comment…I used canned coconut milk for this, it is difficult to get fresh coconuts here 🙂
