Ingredients:
2 cups plain flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup butter, at room temperature
3/4 cup sugar
1/2 tsp vanilla extract
2 eggs
1/4 cup buttermilk / yoghurt
2 ripe bananas, mashed
1 cup fresh red currants, washed
Preparation:
- Preheat oven to 180 degree celcius. Grease a baking pan with 12 mini squares with butter or spray with cooking spray and keep it aside.
- Combine together plain flour, baking powder, baking soda and salt in a bowl and keep it aside.
- In a bowl, cream butter and sugar for about 2 minutes. Add in the eggs and vanilla extract and mix well until combined.
- Then add slowly the flour mixture and buttermilk.
- Add mashed bananas to the batter and mix until combined.
- Fold in the fresh red currants carefully.
- Spoon the mixture into the prepared baking pan and bake in the preheated oven for 20-25 minutes, until lightly browned and a toothpick inserted into the centre comes out clean.
- Remove from oven and cool on a wire rack and serve….
- Can also bake in a greased loaf pan for about 40-45 minutes…
