Ingredients:
250 gm okra / vendakka
1 big potato
2 onions, chopped
1/2 tsp ginger, crushed
1 tsp garlic, crushed
5 green chillies, slit
1 1/2 cup coconut milk
1/2 tsp crushed black pepper
salt to taste
coriander leaves, chopped
1/2 tbsp ghee
1 tbsp oil
Preparation:
- Cut okra into 1″ pieces and keep it aside. Peel and cut potato into medium size pieces and keep it aside.
- Heat oil and ghee in a pan and add onions, ginger and garlic and saute well till onion turns transparent.
- Add chopped okra, potato, green chillies and salt and mix well. Add a cup of water and cook it covered at low flame.
- When the okra and potato are cooked, add coconut milk and crushed pepper, stir well and cook in low flame for 2 minutes.
- Garnish with coriander leaves and remove from the flame. Serve hot…
