Passion Fruit Mousse

Ingredients:

1 cup fresh passion fruit juice, strained
1 tbsp gelatin
2 tbsp cold water
4-6 tbsp sugar, powdered ( or as required)
1 cup whipping cream

For The Topping:

1/2 cup passion fruit pulp with seeds
1 1/2 tsp gelatin
2 tbsp cold water
2 tbsp sugar, powdered

Preparation:

  1. Soak 1 tbsp gelatin in 2 tbsp cold water for 5-10 minutes and then microwave for 30 seconds or melt by double boiling method (ie, melting gelatin by placing it over the pan of boiling water) till you get clear solution. 
  2. In a bowl, add strained passion fruit juice and sugar and mix well.
  3. Add the melted gelatin to this and mix well. Keep it aside.
  4. In a mixing bowl, add whipping cream and whip well until fluffy.
  5. Add passion fruit – gelatin mixture to the whipped cream little by little, beating continuously.
  6. Pour it into serving bowls or glasses and refrigerate until it sets, for about 3-4 hours.
  7. For the topping : Soak 1 1/2 tsp gelatin in 2 tbsp cold water for 5-10 minutes and then microwave for 30 seconds or melt by double boiling method (ie, melting gelatin by placing it over the pan of boiling water) till you get clear solution. 
  8. In a bowl, add passion fruit pulp with seeds and 2 tbsp sugar and mix well.
  9. Add melted gelatin to this mixture and mix well.
  10. Pour it over the set mousse and refrigerate for 4 hours or until set. Serve chilled….
