Podiyari Kanjiyum Mulaku Pappadavum / Broken Red Rice Gruel With Chilli Pappadam

Ingredients:

For Kanji:

1 cup broken rice rice / podiyari / podi ari
6-7 cups water
salt to taste

For Chilli Pappadam:

10 pappadams
1 tsp kashmiri chilli powder
2 garlic cloves, crushed
1 sprig curry leaves
oil, as required

Preparation:

For Kanji:

  1. Wash the rice well and soak it for 30 minutes.
  2. Boil water in a large vessel and add the drained rice and salt and cook till the rice is soft and done. Serve hot with chammanthi, pickle and pappadam..
  • You can also prepare in a pressure cooker – add rice , water and salt and cook it for 1 whistle at medium flame. Open the cooker after 20-25 minutes , adjust the water for thinner consistency..
  • You can also add a tsp of ghee if you prefer…

For Chilli Pappadam:

  1. Cut the pappadams into strips / small pieces and keep it aside.
  2. Heat oil in a deep pan and fry the pappadams in oil and keep aside to drain.
  3. Heat 1 tbsp oil in another pan and add the crushed garlic and curry leaves and saute for 1-2 minutes.
  4. Remove from the flame and add the chilli powder. Now add the fried pappadams and toss thoroughly….Serve with kanji…
