Uluva Choru / Fenugreek Rice

Ingredients:

1 cup parboiled rice / puzhungalari
1 tbsp uluva / fenugreek seeds
1 cup grated coconut
10-12 shallots, sliced
salt to taste
4 cups of water

Preparation:

  1. Wash and soak the rice in water for 1-2 hours.
  2. In a pressure cooker, add the drained rice, fenugreek seeds, grated coconut and sliced shallots and mix well.
  3. Add 4 cups of water and salt and stir well. Cover and cook the rice on medium flame for one whistle and then keep it on low flame and cook for 1-2 whistles. Switch off the flame.
