1 cucumber, peeled and finely grated
2 cups thick Greek yogurt
1 garlic clove, grated or crushed
5-6 mint leaves, finely chopped
1 tbsp lemon juice
1/2 tsp pepper powder
salt to taste
- Place the grated cucumber on a muslin cloth and squeeze out all the excess water . Keep it aside.
- In a bowl, add the yogurt and whisk until smooth. Add the cucumber and mix using whisk to combine.
- Add garlic, chopped mint leaves, lemon juice, pepper powder and salt and stir until everything is well combined.
- Cover and keep it in the fridge till ready to serve…Serve chilled with pita bread, grilled chicken….. or as a dip for vegetables like carrots, cucumbers etc…
