Ingredients:
2 big carrots
1 large beetroot
1 cup grated coconut
2-3 green chillies
3 shallots
2 garlic cloves
1/2 tsp turmeric powder
1/2 tsp chilli powder
1 tsp mustard seeds
2 dry red chillies
1 sprig curry leaves
salt to taste
1 tbsp oil
Preparation:
- Peel and finely chop carrots and beetroot.
- Crush together the grated coconut, green chillies, shallots, garlic cloves, chilli powder and turmeric powder and keep it aside.
- Heat oil in a pan and splutter mustard seeds and fry dry red chillies.
- Add crushed mixture and saute for 15-20 seconds.
- Add chopped carrots, beetroot and salt and mix well.
- Sprinkle 2-3 tbsp of water and cook it covered at low flame till done, stirring occasionally .
- Then remove the lid and stir well for 1-2 minutes till all the water dries up…Remove from flame and serve with rice…
