Carrot and Beetroot Thoran


2 big carrots
1 large beetroot
1 cup grated coconut
2-3 green chillies
3 shallots
2 garlic cloves
1/2 tsp turmeric powder
1/2 tsp chilli powder
1 tsp mustard seeds
2 dry red chillies
1 sprig curry leaves
salt to taste
1 tbsp oil


  1. Peel and finely chop carrots and beetroot.
  2. Crush together the grated coconut, green chillies, shallots, garlic cloves, chilli powder and turmeric powder and keep it aside.
  3. Heat oil in a pan and splutter mustard seeds and fry dry red chillies.
  4. Add crushed mixture and saute for 15-20 seconds.
  5. Add chopped carrots, beetroot and salt and mix well.
  6. Sprinkle 2-3 tbsp of water and cook it covered at low flame till done, stirring occasionally .
  7. Then remove the lid and stir well for 1-2 minutes till all the water dries up…Remove from flame and serve with rice…
