Blackberry Muffins


1 cup self raising flour, sifted
1/2 cup caster sugar
1/2 cup (110 gm) butter, softened
2 large eggs
1 tsp vanilla essence
1 cup (150 g) blackberries


  1. Preheat the oven to 190 degree celcius. Line a 12 hole cupcake tin with paper cases.
  2. In a bowl, combine the flour, sugar, butter, eggs and vanilla essence and whisk / beat together for 2 minutes or until smooth.
  3. Then fold in the blackberries.
  4. Divide the mixture between the paper cases, then transfer the tin to the oven.
  5. Bake in the preheated oven for 15-20 minutes until a toothpick inserted comes out clean.
  6. Transfer the muffins to a wire rack and leave to cool completely..
