Ingredients:
1 1/4 cup plain flour
3/4 tsp baking powder
3/4 tsp baking soda
1/4 tsp salt
3/4 cup sugar
2/3 cup cream cheese
1/2 cup thick cream
2 eggs
1/4 cup oil
1 cup blueberries
Preparation:
- Preheat the oven to 180 degree celcius. Line a 12 hole cupcake tin with paper cases.
- Sift together plain flour, baking powder, baking soda and salt in a bowl and keep it aside.
- In a large mixing bowl, beat cream cheese using a hand mixer until creamy and smooth.
- Add sugar, thick cream, eggs and oil and mix well until combined.
- Add the dry ingredients into this and gently mix until just combined. Do not overmix.
- Then fold in fresh blueberries.
- Divide the batter between the paper cases and then bake for 20-25 minutes or until golden and a toothpick inserted comes out clean.
- Transfer the muffins to a wire rack and leave to cool completely…
