Croissant Breakfast Boats

Ingredients:

6 croissants
4 eggs
2 tbsp milk
2 sausages
3 tbsp capsicum, finely chopped
2 tbsp spring onion, chopped
3/4 cup grated cheese (add more or less to your taste)
1 tsp black pepper powder
1 tsp salt

Preparation:

  1. Preheat the oven to 190 degree celcius. Line the baking sheet with parchment paper or non stick baking mat.
  2. Heat 2 tsp oil in a pan and fry the sausages and chop them into small pieces. Keep it aside.
  3. Cut down the middle of each croissant using a scissor or a knife and keep it aside.
  4. In a bowl, beat eggs and milk together using a whisk.
  5. Add the sausage pieces, cheese, chopped capsicum, spring onions, pepper powder and salt and mix well.
  6. Spoon the egg mixture into each croissant boat and place them in the prepared baking sheet.
  7. Bake in the preheated oven for about 20-25 minutes or until golden brown and the egg mixture has set.
  8. Remove from the oven , allow it to cool a bit and then serve warm…
  • You can prepare the filling by adding ingredients of your choice…Adjust the amount of ingredients according to the size of the croissants…
