Ingredients:
1 1/2 cup plain flour
1/2 tsp baking powder
125 gm unsalted butter
150 gm dark chocolate / milk chocolate chips
1/4 cup brown sugar
1 egg, lightly beaten
1/2 cup desiccated coconut
1 cup desiccated coconut, for coating
Preparation:
- In a saucepan, add butter ,chocolate chips and brown sugar and stir well at low flame until it melts completely and turns smooth.
- Remove from the flame and keep it aside to cool for about 5 minutes.
- Add egg, 1/2 cup desiccated coconut, plain flour and baking powder to the chocolate mixture and mix well until well combined.
- Then keep it covered in the refrigerator for 1/2 an hour to chill.
- Preheat the oven to 180 degree celcius. Line a baking sheet with baking paper/ parchment paper.
- Place 1 cup of desiccated coconut in a plate for rolling.
- Scoop a teaspoon of dough and then shape into a ball.
- Roll in desiccated coconut until completely coated and place on the prepared baking sheet and press lightly.
- Repeat the same with the remaining dough placing them about 2 inches apart.
- Bake in preheated oven for about 12- 15 minutes until the coconut slightly changes its colour.
- Remove from the oven and allow to cool for about 5 minutes on the baking sheet.
- Transfer them to a wire rack to cool completely….. Enjoy 🙂
