Watermelon Halwa

Ingredients:

5 cups watermelon pieces
3/4 cup sugar (add to your taste)
3/4 cup cornflour
1/4 cup ghee
1/2 tsp cardamom powder
3 tbsp cashew nuts, chopped
3 tbsp pistachios, chopped

Preparation:

  1. In a blender, add the chopped watermelon pieces and blend well without adding water. Strain the juice ( about 1 litre juice) and keep it aside.
  2. In a mixing bowl, add the watermelon juice, sugar and corn flour and mix well without any lumps.
  3. Transfer this to a thick bottomed pan and cook in high flame, stirring continuously for about 25-30 minutes.
  4. When it starts to thicken, reduce the flame to medium and add 1 tsp of ghee with an interval of 5 minutes and cook stirring continuously.
  5. When it separates from the pan. add cardamom powder and mix well.
  6. Add chopped cashew nuts and pistachios and mix well and switch off the flame.
  7. Transfer to a greased steel plate/ glass dish and level / flatten smoothly with a spoon.
  8. Allow it to cool for 2 hours and then cut into desired size pieces and serve…
