Chicken Ularthu

Ingredients:

1 kg chicken, cut into small pieces
2 tbsp coriander powder
2 tbsp kashmiri chilli powder
1/4 cup coconut slices / thengakothu
1 1/2 tbsp crushed ginger-garlic
2 tsp pepper powder
3/4 tsp garam masala
1/2 tsp turmeric powder
2 tsp vinegar
2 sprig curry leaves
salt to taste
8-10 garlic, crushed
1 medium onion, sliced
1 tsp crushed chilli / chilli flakes
2 tbsp coconut oil

Preparation:

  1. Heat a pan and add coriander powder and kashmiri chilli powder and dry roast it at low flame. Don’t allow it to change its colour.
  2. In a large bowl, add cleaned chicken pieces, dry roasted chilli – coriander powder, coconut slices, crushed ginger-garlic, pepper powder, garam masala, few curry leaves, turmeric powder, vinegar and salt and mix well. Keep it aside for at least 1/2 an hour.
  3. In a thick bottomed pan, add marinated chicken pieces and mix well and cook it covered at low flame for 20-25 minutes. Then cook at high flame till the water dries.
  4. Heat oil in a thick bottomed pan / iron pan and add crushed garlic and sliced onion and saute well adding a pinch of salt till light golden brown.
  5. Add curry leaves, crushed chilli and cooked chicken and mix well at high flame for 5 minutes.
