Ingredients:
1/2 kg mussels / kallummakaya, cleaned
1 1/2 tsp kashmiri chilli powder
1/4 tsp turmeric powder
1/4 tsp fennel powder
pinch of salt
2 garlic cloves, crushed
3-4 tbsp oil
For Masala:
2 onions, finely chopped
1 tsp ginger, finely chopped
2 green chillies, chopped
1 tbsp curry leaves, chopped
1/4 tsp turmeric powder
1 tsp kashmiri chilli powder
3/4-1 tsp garam masala
1/4 tsp fennel powder
2 tbsp coriander leaves
salt to taste
For Batter:
1 cup plain flour
2 eggs
1 cup +2 tbsp milk
1/2 cup oil
1/2 tsp pepper powder
salt to taste

Preparation:
- Steam cook the cleaned mussels for 10 minutes. Remove the flesh from shell and marinate it with 1 1/2 tsp kashmiri chilli powder, 1/4 tsp turmeric powder, 1/2 tsp pepper powder, 1/4 tsp fennel powder and a pinch of salt and keep it aside for 10 minutes.
- Heat oil in a pan and add crushed garlic and saute.
- Add marinated mussels to this and fry on both sides. Remove them from the pan and then chop them into small pieces ( keep aside 5-6 fried mussels for garnishing on top ) and keep it aside.
- In the same oil, add finely chopped onion, green chillies, ginger, curry leaves and salt and saute well.
- Add 1/4 tsp turmeric powder, 1 tsp kashmiri chilli powder, 3/4 -1 tsp garam masala and 1/4 tsp fennel powder and mix well.
- Add the chopped fried mussels and mix well for 2-3 minutes.
- Add chopped coriander leaves and mix well. Adjust the salt and remove from flame.
- In a blender, add eggs, 1/2 tsp pepper powder, milk, 1/2 cup oil, plain flour and salt and blend well.
- Heat a non stick saucepan on low flame and add 1 tsp oil / ghee and spread the bottom and sides.
- Pour half of the prepared flour batter and cook it covered for about 4-5 minutes at medium flame till lightly cooked.
- Then open the lid and add prepared mussels masala and spread it evenly.
- Pour the remaining batter on sides first and cover all over the masala.
- Garnish with coriander leaves with stalks and reserved fried mussels.
- Cover the pan and cook at low flame for 20-30 minutes or until the skewer inserted in the center comes out clean.
- Heat another nonstick pan and apply little oil and flip the prepared pola to the hot pan and cook it again for 2-3 minutes at very low flame.
