Vegetable Mutta Surka

Ingredients:

1 cup jeerakasala rice
1 cup ponni rice
2 eggs
1/2 onion, chopped
3 tbsp grated carrot
1-2 green chillies, finely chopped
few curry leaves, chopped
salt to taste
oil, as required

Preparation:

  1. Wash and soak the jeerakasala rice and ponni rice in water for 5-6 hours.
  2. In a blender, add the drained rice and grind it adding very little water.
  3. Then add eggs and salt to this and grind well to a smooth semi thick batter. It should have a pourable consistency.
  4. Transfer it to a bowl and keep it covered for 20 minutes.
  5. Add chopped onion, curry leaves, carrot and green chilli to the batter and mix well.
  6. Heat oil in a deep frying pan and add a ladle of batter and allow to cook at medium flame.
  7. When puffed up, flip it to other side and fry till it turns light golden brown colour.
  8. Serve hot with any spicy curry of your choice…
