Beans Vanpayar ( Red Beans )Thoran

Ingredients:

300 gm beans
1/4 cup vanpayar / red beans ( 1/2 cup cooked)
1/2 cup grated coconut
4 shallots, thinly sliced
3-4 green chillies
1/4 tsp cumin powder
1/4 tsp turmeric powder
1 sprig curry leaves
1 tsp mustard seeds
salt to taste
1 1/2 tbsp coconut oil

Preparation:

  1. Soak the vanpayar in water overnight and pressure cook it adding enough water and salt. Drain the water and keep it aside.
  2. Chop the beans into small pieces and keep it aside.
  3. Heat oil in a pan and splutter mustard seeds.
  4. Add sliced shallots, curry leaves and green chillies and saute well.
  5. Add chopped beans, turmeric powder, cumin powder and salt and mix well.
  6. Sprinkle little water and cook covered at low flame, stirring occasionally.
  7. Add grated coconut to this and mix well.
  8. Then add cooked vanpayar and mix well for 2-3 minutes until it is dry. Remove from flame and serve with rice…
