Ingredients:
1 big / 1 cup carrot, peeled and chopped
1 cup beans, chopped
1 cup spinach, chopped
1 small onion, chopped
3 green chillies, chopped
1 sprig curry leaves
1/2 tsp turmeric powder
1/2 cup grated coconut
salt to taste
2 tbsp coconut oil
Preparation:
- Chop carrot and beans into fine pieces.
- Wash and chop spinach into very small pieces.
- Heat oil in a pan and splutter mustard seeds.
- Add chopped onion, green chillies and curry leaves and saute well.
- Add chopped carrot, beans, turmeric powder and salt and mix well.
- Cook covered at low flame till soft and cooked, stirring in between.
- Add grated coconut into this and mix well for 1-2 minutes.
- Then add chopped spinach and mix well. Adjust the salt and cook covered till done.
