Black Rice Payasam

Ingredients:

1/2 cup black rice
1 cup jaggery powder (add to your taste)
2 cups coconut milk
1 tsp cardamom powder
1/4 cup cashew nuts
2 tbsp ghee

Preparation:

  1. Wash and soak the rice in water for 6-7 hours or overnight.
  2. In a pressure cooker, add the rice and 3-4 cups of water and pressure cook for 7-8 whistles or until the rice is cooked well.
  3. In a thick bottomed pan / uruli, add jaggery powder and 2 cups of water and boil well until it melts.
  4. Then add the cooked rice and coconut milk and mix well and boil in medium flame for 5 minutes.
  5. Add cardamom powder into this and mix well.
  6. Heat ghee in a small pan and fry add cashew nuts and fry till it turns golden brown. Add this to the payasam and mix… Enjoy …
