Chocolate Chip Donuts

Ingredients:

1 1/4 cup plain flour
3/4 tsp baking powder
1/8 tsp baking soda
1/4 tsp salt
1/2 cup buttermilk
1/4 cup + 2 tbsp sugar
56 gm (4 tbsp) unsalted butter, melted
1 egg
1/2 tsp vanilla essence
1/4 cup mini chocolate chips

For Chocolate Glaze:

3/4 cup icing sugar
1 1/4 tbsp ( 10 gm ) cocoa powder
1 1/2-2 tbsp milk
1/4 tsp vanilla essence

Preparation:

  1. Preheat the oven to 180 degree celcius and lightly grease the donut pan and keep it aside. .
  2. Add plain flour, baking powder, baking soda and salt in a small bowl and combine well.
  3. In another bowl, whisk the buttermilk, sugar, melted butter, egg and vanilla essence until well combined.
  4. Then add the dry ingredients (step 2) into this wet mixture and gently fold until just combined. Don’t over mix.
  5. Add the mini chocolate chips and fold until just combined.
  6. Fill about 2/3 full of batter into the prepared doughnut pan using a spoon or a piping bag.
  7. Then bake in the preheated oven for 10-12 minutes or until done.
  8. Allow to cool for 5 minutes in the pan and then transfer to a wire rack to cool completely.

For Chocolate Glaze:

  1. In a small bowl, add icing sugar, cocoa powder, milk and vanilla essence and whisk well until smooth.
  2. Then immediately dip the cooled donuts in chocolate glaze and top with chocolate sprinkles / mini chocolate chips…Keep it aside for the glaze to set…
