1 large beetroot ,finely chopped
2 shallots,thinly sliced
2-3 green chillies,slit
1/4 cup grated coconut
1/2 tsp mustard seeds
- Peel the beetroot and chop it into small pieces.
- Heat oil in a pan and splutter mustard seeds.
- Add curry leaves, finely chopped beetroot, shallots, green chillies and salt and stir well.
- Cover and cook for about 10 minutes.
- Then add the grated coconut, mix well and cook it covered in low flame until the beetroot is fully cooked and dry. Serve with rice.
