Dates Pancake

Ingredients:
1 1/2 cup plain flour/ maida
20-25 dates, pitted
2 cup milk
1 1/2 tsp baking powder
1/4- 1/2 cup sugar
2 egg whites
a pinch of salt
1/2 tsp vanilla essence
butter or cooking spray
Preparation:
- Chop the pitted dates and grind it with 1/2 cup of milk to a coarse paste and keep it aside.
- In a bowl, mix plain flour and baking powder. Add sugar and salt and mix well.
- Add 1 1/2 cup milk little by little and mix well.
- Add ground dates paste to this and combine well.
- In another bowl, beat egg whites and vanilla essence till fluffy. Then slowly fold in with the pancake batter.
- Heat a frying pan or griddle over medium heat and lightly brush the pan with melted butter or oil or cooking spray.
- Pour about 1/4 cup pancake batter onto the hot pan using a small ladle.
- When the bottom of the pancake is golden brown and bubbles starts to appear on the uncooked top surface of the pancake (2-3 minutes), turn over. Cook until golden brown for about 2-3 minutes.
- Repeat with remaining batter, brushing the pan with melted butter or oil.
- Transfer to a plate and drizzle honey or maple syrup or dates syrup and serve warm...
