Chena Koottan / Yam Curry

Ingredients:
500 gm yam, peeled and cubed
1 cup grated coconut
4-5 green chillies, slit
1/2 tsp turmeric powder
1 tsp chilli powder
1/4 tsp cumin seeds
2 shallots, chopped
2 garlic cloves, chopped
1 tsp ghee
3 dry red chillies
1 tsp mustard seeds
1 sprig curry leaves
salt to taste
1 tbsp coconut oil
Preparation:
- In a pan, add the cubed yam with chilli powder, turmeric powder, green chillies and salt and cook adding enough water until it is soft.
- Grind together grated coconut, cumin seeds and garlic and keep it aside.
- Mash the cooked yam using a spoon and add the ground coconut mixture into this cooked yam and mix well.
- Adjust the salt and boil it for 5-6 minutes or until the raw taste is gone.
- Add ghee to this and mix well. Switch off the flame.
- Heat coconut oil in a pan and splutter mustard seeds. Add shallots, dry red chillies and curry leaves.
- Add this seasoning into the curry and mix well. Serve hot with rice or kanji...
