Mint Coconut Chutney / Pudina Chutney

Ingredients:
30 gm ( about 1 cup) mint leaves
2 tbsp coriander leaves
10 shallots, chopped
1 big garlic
3 green chillies
small gooseberry sized tamarind
1/4- 1/2 cup grated coconut
1 tbsp + 1/2 tsp urad dal
2 dry red chillies
1 sprig curry leaves
1/2 tsp mustard seeds
salt to taste
1 1/2 tbsp + 2 tsp oil
Preparation:
- Heat 1 1/2 tbsp oil in a pan at medium flame and add 1 tbsp urad dal and fry till light golden.
- Add chopped shallots, garlic, green chillies, tamarind and salt and saute till it cooked.
- Then add mint leaves and coriander leaves and saute for about 15-20 seconds. Switch off the flame and allow to cool.
- Now add grated coconut to this and mix well. Then grind it to a paste adding 1/4 cup of water and transfer it to a bowl.
- Heat 2 tsp oil in a pan and splutter mustard seeds. Add 1/2 tsp urad dal, dry red chillies and curry leaves.
