Vegetable Mutta Surka

Ingredients:
1 cup jeerakasala rice
1 cup ponni rice
2 eggs
1/2 onion, chopped
3 tbsp grated carrot
1-2 green chillies, finely chopped
few curry leaves, chopped
salt to taste
oil, as required
Preparation:
- Wash and soak the jeerakasala rice and ponni rice in water for 5-6 hours.
- In a blender, add the drained rice and grind it adding very little water.
- Then add eggs and salt to this and grind well to a smooth semi thick batter. It should have a pourable consistency.
- Transfer it to a bowl and keep it covered for 20 minutes.
- Add chopped onion, curry leaves, carrot and green chilli to the batter and mix well.
- Heat oil in a deep frying pan and add a ladle of batter and allow to cook at medium flame.
- When puffed up, flip it to other side and fry till it turns light golden brown colour.
- Serve hot with any spicy curry of your choice...
