Rava Kesari / Sheera


1 cup rava / semolina
2 cups water
1 cup sugar (add more according to your sweetness)
3-4 tbsp + 1/4 cup ghee
4 tbsp saffron water
1/2 tsp cardamom powder
12-15 cashew nuts
2 tbsp raisins


  1. Soak 2-3 pinches of saffron threads in 4 tbsp of warm water for 15 minutes.
  2. Heat 3-4 tbsp ghee in a pan and add cashew nuts and raisins and roast at low flame till golden. Keep it aside.
  3. Add rava into the same pan and roast at low flame for 5 minutes till aromatic. Keep it aside.
  4. In a large thick bottomed pan, boil 2 cups of water.
  5. Add roasted rava into this and stir continuously at low flame until the rava gets cooked and all the water evaporates with no lumps.
  6. Then add sugar and stir well till the sugar dissolves.
  7. Add saffron water, cardamom powder and 1/4 cup of ghee and stir continuously till combined well and becomes thick.
  8. Add roasted cashew nuts and raisins and mix well.
  9. When the mixture separates from the pan, switch off the flame…Serve warm…
