Little Millet Upma

Ingredients:
1 cup little millet
2 cups water ( used for soaking little millet )
1 onion, chopped
2 green chillies, finely chopped
1 tbsp ginger, finely chopped
1 carrot, grated
8 beans, chopped
1/2 cup green peas
1/4 tsp turmeric powder
salt to taste
1/2 cup grated coconut
1 tsp urad dal
2 dry red chillies
1 tsp mustard seeds
1 sprig curry leaves
1 1/2 tbsp ghee
1 tbsp coriander leaves, chopped
Preparation:
- Wash and soak little millet in 2 cups of water overnight. Drain the water and keep it aside.
- Boil the water used for soaking little millet ( to use it for cooking upma).
- Heat ghee in a thick bottomed pan and splutter mustard seeds.
- Add urad dal, dry red chillies, curry leaves, chopped ginger, green chillies and onion and saute till transparent.
- Add chopped beans, carrot and green peas and saute well.
- Add turmeric powder into this and mix well.
- Then add drained little millet and salt and mix well.
- Now add 2 cups of boiling water (used for soaking little millet) and mix well. When it starts to boil, cook covered at low- medium flame, stirring in between.
- When it is almost dry, add grated coconut and mix well.
- Add chopped coriander leaves and mix well. Remove it from flame and serve hot...
