Vendakka Kondattam / Sun Dried Okra Chips

Ingredients:

8-10 vendakka / okra / ladies finger
1/2 tsp turmeric powder
1 tsp chilli powder
salt to taste
oil, for frying

Preparation:

  1. Wash the okra and pat dry. Then chop them into round pieces.
  2. Transfer it to a bowl and add turmeric powder, chilli powder and salt and mix well.
  3. Spread them on a sheet lined with parchment paper and dry them in the sun for 3-4 days until it completely dries up or crisp. Store them in an air-tight container.

4. To fry, heat oil in a pan and add the dried okra and fry them at medium flame till it puff up.
5. Drain on paper towels and serve with rice as a side dish…
