Cucumber Rice

Ingredients:

1 cup basmati rice

1 cup grated cucumber

1/2 tsp mustard seeds

1/2 tsp cumin seeds

2 tsp chana dal

1 1/2 tsp urad dal

1/4 cup peanuts

10 cashew nuts

2 dry red chillies

1 tsp ginger, finely chopped

2 green chillies, chopped

1/4 tsp asafoetida

1 sprig curry leaves

1/4 tsp pepper powder

1 tbsp lemon juice

2 tbsp coriander leaves, chopped

salt to taste

2 tbsp ghee

Preparation:

  1. Wash the rice and cook in a deep pan adding enough water and salt till done. Drain the water and keep it aside to cool completely.
  2. Heat ghee in a thick bottomed pan and splutter mustard seeds and cumin seeds.
  3. Add urad dal, chana dal, peanuts and cashew nuts and saute till golden on medium flame.
  4. Add dry red chillies, curry leaves, asafoetida, chopped ginger, green chillies, grated cucumber, pepper powder and salt and saute for 2-3 minutes.
  5. Then add 2 cups cooked rice, lemon juice and chopped coriander leaves, mix well and cook for 3-4 minutes on low flame. Remove from the flame and serve hot…
