Thengapal Potato Bhaji / Potato Curry with Coconut Milk

Ingredients:
2 large potatoes, chopped
1/4 cup carrot, chopped
1 small onion, chopped
2-3 green chillies, slit
small piece ginger, chopped
1/2 tsp turmeric powder
1 cup coconut milk
2 dry red chillies
1 sprig curry leaves
1/2 tsp mustard seeds
salt to taste
1/4-1/2 tsp pepper powder
2 tsp oil
Preparation:
- Peel and chop potatoes and carrot into small cubes.
- In a pan, add chopped potato, carrot, onion, green chillies, ginger, turmeric powder and salt and cook covered adding enough water till soft and cooked well.
- Add coconut milk to this, mix well and heat for 2-3 minutes.
- Heat oil in a small pan and splutter mustard seeds. Add dry red chillies and curry leaves and fry.
- Add this seasoning to potato curry and mix well.
- Add pepper powder and mix well. Serve hot with dosa, appam etc...
