Mutton (Goat) Curry

Ingredients:
1 kg mutton pieces, cleaned
1 cup shallots, crushed
10-15 green chillies, crushed
2 tbsp garlic, crushed
2 tbsp ginger, crushed
1 tsp kashmiri chilli powder, heaped
3/4 tsp turmeric powder
3/4 tsp + 1/4 tsp garam masala
1/2 tsp fennel powder
2 tbsp coriander powder
2 sprig curry leaves
1 tsp mustard seeds
1/4 cup shallots, sliced
1/2 tsp kashmiri chilli powder
3 dry red chillies
salt to taste
2 tbsp coconut oil
Preparation:
- In a pressure cooker, add cleaned mutton pieces , turmeric powder, 1 tsp heaped kashmiri chilli powder, crushed shallots, green chillies, ginger, garlic, coriander powder, 3/4 tsp garam masala, fennel powder, 1 sprig curry leaves and salt and mix well with hand for 4-5 minutes.
- Add about 1/2 cup of water and pressure cook for 1 whistle at high flame and then cook at medium flame for 4-5 whistles or until cooked.
- Once the pressure releases, open the cooker and mix well. Adjust the salt.
- Heat coconut oil in a pan and splutter mustard seeds. Add sliced shallots, dry red chillies and curry leaves and fry till brown.
- Switch off the flame and add 1/2 tsp kashmiri chilli powder and 1/4 tsp garam masala and mix well.
- Add this tempering to the curry and mix well. Serve hot...
