Easy Blueberry Muffins


1 1/2 cup plain flour
1 1/2 tsp baking powder
1/4 tsp salt
1/3 cup milk
1/4 cup oil
1/2 cup sugar
1 large egg
1/2 tsp vanilla essence
100 gm blueberries


  1. Preheat the oven to 190 degree celcius. Line a 12 hole cupcake tin with paper cases.
  2. In a bowl, whisk together plain flour, baking powder and salt.
  3. In another bowl, add milk, oil, sugar, egg and vanilla essence and mix well until sugar dissolves.
  4. Add milk mixture to the flour mixture and mix until just combined.
  5. Then gently fold in blueberries.
  6. Divide the batter between the paper cases, then transfer the tin to the oven.
  7. Bake in the preheated oven for 20-25 minutes until golden brown and a toothpick inserted comes out clean.
  8. Transfer the muffins to a wire rack and leave to cool completely…
