Ingredients:
2 medium carrots
4-5 large eggs
1/2 cup milk
2 cardamoms
1/2 cup sugar (add to your sweetness)
1 tbsp milk powder
1/3 cup vermicelli / semiya
a pinch of salt
1 tbsp ghee
1 tbsp cashew nuts
1 tbsp raisins
Preparation:
- Peel and cut the carrots into pieces and cook for 1 whistle adding enough water.
- Cook the vermicelli adding enough water till soft and keep it aside.
- In a blender, add eggs, milk, cardamoms, sugar, cooked carrots and milk powder and grind well to a smooth batter.
- Transfer it to a bowl and add a pinch of salt, cooked vermicelli and mix well.
- Pour into a greased pan and cover it with a lid and cook on low flame.
- After 8-10 minutes, open the lid and sprinkle the fried cashew nuts and raisins and then cook covered on low flame for another 20-25 minutes or till the inserted tester comes out clean.
