Chickpea Avocado Salad

Ingredients:
1 big ripe avocado
lemon juice of 1 lemon
salt to taste
1 cup chickpea, boiled ( can also use canned chickpeas )
1 tomato, chopped
1 green chilli, chopped
1 cucumber, chopped
3 tbsp coriander leaves, chopped
Preparation:
- Cut the avocado in half. Remove the pit and scoop out the flesh with a spoon to a bowl.
- To prepare the avocado dressing, mash the avocado flesh and then add lemon juice and salt and mash it well to make it smooth.
- In a serving bowl, add the boiled chickpeas, chopped tomato, green chilli and cucumber.
- Add the prepared avocado dressing and coriander leaves into this and mix everything well. Salad is ready to serve…Enjoy....
