Chickpea Avocado Salad

Ingredients:

1 big ripe avocado
lemon juice of 1 lemon
salt to taste
1 cup chickpea, boiled ( can also use canned chickpeas )
1 tomato, chopped
1 green chilli, chopped
1 cucumber, chopped
3 tbsp coriander leaves, chopped

Preparation:

  1. Cut the avocado in half. Remove the pit and scoop out the flesh with a spoon to a bowl.
  2. To prepare the avocado dressing, mash the avocado flesh and then add lemon juice and salt and mash it well to make it smooth.
  3. In a serving bowl, add the boiled chickpeas, chopped tomato, green chilli and cucumber.
  4. Add the prepared avocado dressing and coriander leaves into this and mix everything well. Salad is ready to serve…Enjoy….
