Egg Bonda / Mutta Bonda

Ingredients:

4 hard boiled eggs
2 big onions, finely chopped
3 big potatoes
1 sprig curry leaves, chopped
1 tsp ginger, finely chopped
2-3 green chillies, finely chopped
1/2 tsp turmeric powder
1 tsp garam masala
2 tbsp coriander leaves, chopped
salt to taste
1/2 cup plain flour
1/2 cup cornflour
coconut oil, as required

Preparation:

  1. Boil the potatoes, mash it well and keep it aside.
  2. Heat 1 tbsp oil in a pan and add finely chopped onions and saute well adding little salt.
  3. Add chopped curry leaves, green chillies and ginger and saute well.
  4. Add turmeric powder and garam masala and saute well until the raw smell goes.
  5. Then add the mashed potatoes and enough salt into this and mix well.
  6. Add chopped coriander leaves and mix well. Switch off the flame.
  7. Remove the shell of boiled eggs and cut each into half and cover it with potato mixture.

8. In a bowl, add plain flour, cornflour and salt and mix well. Add required water little by little to make a smooth batter.
9. Heat oil in a deep pan. Dip the egg-potato balls in batter and carefully drop into hot oil.
10. Fry it on medium flame till all sides are golden brown. 
11.Remove it from the oil and drain them on a paper towel….Serve with tea / coffee..
