Curd Broken Wheat / Thairu Nurukku Gothambu

Ingredients:

2 cups nurukku gothambu / broken wheat / cracked wheat

1 1/2 cup thick yogurt

500 ml milk

1 1/2 tbsp ginger, chopped

4 green chillies, chopped

2 tbsp cashew nuts

1 tsp pepper corns (optional)

1 sprig curry leaves

1/2 tsp asafoetida powder

1 tbsp urad dal

1 tbsp chana dal

1 tsp mustard seeds

4-5 dry red chillies

1 tsp sugar

salt to taste

2 tbsp coconut oil

2-3 tbsp coriander leaves, chopped

Preparation:

  1. Soak the broken wheat in water for 30 minutes.
  2. Boil 7-8 cups of water in a pan and add soaked broken wheat and cook well until done.
  3. Transfer to a large serving bowl and keep it aside to cool.
  4. Heat oil in a pan and splutter mustard seeds. Add urad dal and chana dal and saute till golden.
  5. Add dry red chillies and curry leaves and saute.
  6. Add chopped ginger, green chillies, cashew nuts and pepper corns and fry.
  7. Add asafoetida powder and mix well. Switch off the flame.
  8. Add this tempering (reserve little for garnishing) to the cooked broken wheat and mix well.
  9. Add salt to this and mix well and then keep it aside.
  10. In a bowl, add thick yogurt and whisk well till smooth.
  11. Add this beaten yogurt to the broken wheat mixture and add cold milk and mix well.
  12. Adjust salt and add 1 tsp sugar and mix well.
  13. Add chopped coriander leaves and mix well.
  14. Garnish with reserved tempering and coriander leaves and serve…
