Curd Broken Wheat / Thairu Nurukku Gothambu

Ingredients:
2 cups nurukku gothambu / broken wheat / cracked wheat
1 1/2 cup thick yogurt
500 ml milk
1 1/2 tbsp ginger, chopped
4 green chillies, chopped
2 tbsp cashew nuts
1 tsp pepper corns (optional)
1 sprig curry leaves
1/2 tsp asafoetida powder
1 tbsp urad dal
1 tbsp chana dal
1 tsp mustard seeds
4-5 dry red chillies
1 tsp sugar
salt to taste
2 tbsp coconut oil
2-3 tbsp coriander leaves, chopped
Preparation:
- Soak the broken wheat in water for 30 minutes.
- Boil 7-8 cups of water in a pan and add soaked broken wheat and cook well until done.
- Transfer to a large serving bowl and keep it aside to cool.
- Heat oil in a pan and splutter mustard seeds. Add urad dal and chana dal and saute till golden.
- Add dry red chillies and curry leaves and saute.
- Add chopped ginger, green chillies, cashew nuts and pepper corns and fry.
- Add asafoetida powder and mix well. Switch off the flame.
- Add this tempering (reserve little for garnishing) to the cooked broken wheat and mix well.
- Add salt to this and mix well and then keep it aside.
- In a bowl, add thick yogurt and whisk well till smooth.
- Add this beaten yogurt to the broken wheat mixture and add cold milk and mix well.
- Adjust salt and add 1 tsp sugar and mix well.
- Add chopped coriander leaves and mix well.
- Garnish with reserved tempering and coriander leaves and serve…
