Ingredients:
1 kg basmati rice ( about 4 1/2 cup )
1 1/4 kg chicken, cleaned
3 big onions, sliced
3 big tomato, chopped
1 large potato, peeled and cubed
3 tbsp ginger-garlic paste
1 packet bombay biriyani masala ( I used Shan special biriyani masala)
1 cup less sour yogurt
salt to taste
1 cup oil
Preparation:
- Heat oil in a large thick bottomed pan and add sliced onion and saute well till golden brown.
- Add chopped tomato and saute well till soft and cooked and the oil separates.
- Add cleaned chicken pieces and saute for 2 minutes.
- Add ginger-garlic paste and mix well and saute till the raw smell goes.
- Add peeled and cubed potato and mix well.
- Then add bombay biriyani masala and mix well.
- Add yogurt and salt and mix well and saute for 10 minutes.
- Now add 1 1/2 cup hot water and mix well and cook covered until 3/4 cooked.
- In the meantime, boil enough water in a large pan and add drained rice and salt and cook the rice till half done.
- Drain the water from rice and add the rice on the top of the prepared chicken masala and cook covered on low flame for 10-15 minutes.
- Switch off the flame and keep it covered for another 10 minutes.
- Mix before serving and serve with raita, pickle and pappadum….
