Ingredients:
3/4 cup plain flour
1/2 tsp baking powder
115 g butter, softened to room temperature
3/4 cup caster sugar
lemon zest from 1 lemon
2 eggs, at room temperature
lemon juice of 1 lemon
For the frosting:
1 3/4 cup icing sugar, sifted
65 g butter, softened to room temperature
4 tbsp lemon juice (extra if needed)
Preparation:
- Preheat the oven to 170 degree celsius. Grease and line a square cake tin with baking paper and keep it aside.
- Sift together plain flour and baking powder and keep it aside.
- In a large bowl, add butter, caster sugar and lemon zest and beat until smooth and creamy.
- Add the eggs and lemon juice and beat to combine. Then fold in the sifted flour.
- Transfer the mixture into the prepared cake tin and bake for 20-25 minutes or until a skewer inserted to the centre comes out clean.
- Remove the pan from oven and cool for 10 minutes and then transfer to a wire rack and let them cool completely. Then carefully cut into slices.
- To prepare the frosting, place the sifted icing sugar, butter and lemon juice into a bowl and whisk well until smooth and creamy. (If the frosting is too thick, add a bit more lemon juice and whisk again and if too thin, add a little more icing sugar.)
