Baked Lemon Slice

Ingredients:

3/4 cup plain flour
1/2 tsp baking powder
115 g butter, softened to room temperature
3/4 cup caster sugar
lemon zest from 1 lemon
2 eggs, at room temperature
lemon juice of 1 lemon

For the frosting:

1 3/4 cup icing sugar, sifted
65 g butter, softened to room temperature
4 tbsp lemon juice (extra if needed)

Preparation:

  1. Preheat the oven to 170 degree celsius. Grease and line a square cake tin with baking paper and keep it aside.
  2. Sift together plain flour and baking powder and keep it aside.
  3. In a large bowl, add butter, caster sugar and lemon zest and beat until smooth and creamy.
  4. Add the eggs and lemon juice and beat to combine. Then fold in the sifted flour.
  5. Transfer the mixture into the prepared cake tin and bake for 20-25 minutes or until a skewer inserted to the centre comes out clean.
  6. Remove the pan from oven and cool for 10 minutes and then transfer to a wire rack and let them cool completely. Then carefully cut into slices.
  7. To prepare the frosting, place the sifted icing sugar, butter and lemon juice into a bowl and whisk well until smooth and creamy. (If the frosting is too thick, add a bit more lemon juice and whisk again and if too thin, add a little more icing sugar.)
