Cabbage – Beetroot Mezhukkupuratti / Stir Fry

Ingredients:

1 beetroot, grated / shredded
2 cups cabbage , grated / shredded
6 shallots, chopped
3 green chillies, chopped
2 garlic cloves, chopped
1 sprig curry leaves
1/2 tsp turmeric powder
salt to taste
1 tsp mustard seeds
1 tbsp coconut oil

Preparation:

  1. Peel and finely shred / grate the beetroot and keep it aside.
  2. Wash the cabbage and finely shred / grate and keep it aside.
  3. Heat oil in a pan and splutter mustard seeds.
  4. Add chopped shallots, green chillies, garlic and curry leaves and saute well until they start to change colour.
  5. Add turmeric powder into this and mix well.
  6. Then add grated cabbage, beetroot and salt and mix well.
  7. Cook covered at low flame until soft and completely cooked, stirring occasionally.
  8. Remove from the flame and serve with rice and other side-dishes…
