Bitter Gourd / Pavakka Puli Inji

Ingredients:

1 medium bitter gourd / pavakka / kaipakka

1 big lemon sized tamarind

100-150 gm jaggery

6-7 tbsp ginger, finely chopped

3 garlic cloves, finely chopped

6-8 green chillies, finely chopped

1/4 tsp turmeric powder

1/2 tsp chilli powder

1/4 tsp coriander powder

2 pinch of fenugreek powder

salt to taste

1 sprig curry leaves

3 dry red chillies

1 tsp mustard seeds

2 tbsp coconut oil

Preparation:

  1. Cut the bitter gourd into fine pieces.
  2. Soak tamarind in 1 cup of water, extract its juice and keep it aside.
  3. Melt jaggery in 1/2 cup of water and keep it aside.
  4. Heat coconut oil in a pan and splutter mustard seeds. Add dry red chillies and curry leaves and saute.
  5. Add chopped ginger, garlic and green chillies and saute well adding little salt.
  6. Reduce the flame and add turmeric powder, chilli powder and coriander powder and saute till raw smell goes.
  7. Add chopped bitter gourd and mix well till slightly wilts.
  8. Then add tamarind water, mix well and cook till bitter gourd turns soft and well cooked.
  9. Add melted jaggery and mix well and boil well at low flame till it thickens.
  10. Adjust the salt and add fenugreek powder and mix well.
  11. Switch off the flame and let it cool and serve with rice...
