Ingredients:
1 medium bitter gourd / pavakka / kaipakka
1 big lemon sized tamarind
100-150 gm jaggery
6-7 tbsp ginger, finely chopped
3 garlic cloves, finely chopped
6-8 green chillies, finely chopped
1/4 tsp turmeric powder
1/2 tsp chilli powder
1/4 tsp coriander powder
2 pinch of fenugreek powder
salt to taste
1 sprig curry leaves
3 dry red chillies
1 tsp mustard seeds
2 tbsp coconut oil
Preparation:
- Cut the bitter gourd into fine pieces.
- Soak tamarind in 1 cup of water, extract its juice and keep it aside.
- Melt jaggery in 1/2 cup of water and keep it aside.
- Heat coconut oil in a pan and splutter mustard seeds. Add dry red chillies and curry leaves and saute.
- Add chopped ginger, garlic and green chillies and saute well adding little salt.
- Reduce the flame and add turmeric powder, chilli powder and coriander powder and saute till raw smell goes.
- Add chopped bitter gourd and mix well till slightly wilts.
- Then add tamarind water, mix well and cook till bitter gourd turns soft and well cooked.
- Add melted jaggery and mix well and boil well at low flame till it thickens.
- Adjust the salt and add fenugreek powder and mix well.
