Parsley Chicken Fry

Ingredients:

1/2 kg chicken
1/4 cup yogurt
1 tsp red chilli powder
1 tbsp kashmiri chilli powder
1 tsp coriander powder
1/2 tsp turmeric powder
1 tsp pepper powder
1 tsp chat masala
1 tsp garam masala
1 tbsp tomato sauce
1 tbsp lemon juice
salt to taste
2 green chillies, finely chopped
1 tbsp ginger-garlic paste
1 sprig curry leaves, chopped
1/2 cup (handful) parsley leaves, finely chopped
a pinch of red food colour
oil, as required

Preparation:

  1. Cut and clean chicken into pieces.
  2. In a large bowl, add yogurt, red chilli powder, kashmiri chilli powder, coriander powder, turmeric powder, pepper powder, chat masala, garam masala, tomato sauce, lemon juice and salt and mix well.
  3. Then add ginger-garlic paste, chopped green chillies, curry leaves, parsley leaves and red food colour and mix it well.
  4. Add cleaned chicken pieces into this and marinate it well and keep it covered for at least 30 minutes.
  5. Heat oil in a pan over medium-high flame and carefully add the marinated chicken pieces and fry in batches, turning occasionally, until golden brown and cooked thorough about 10-15 minutes.
