Ragi Appam

Ingredients:
2 cups ragi flour / finger millet flour
2 - 2 1/2 cup water
1 cup grated coconut
3/4 cup cooked rice
3/4-1 tsp instant yeast
2 tsp sugar
salt to taste
Preparation:
- In a blender, add 2 cups water, ragi flour, grated coconut, cooked rice, yeast and sugar and mix well and grind well to a smooth batter. ( Add extra 1/2 cup water if required )
- Transfer the batter to a bowl and keep it for fermentation for 3-4 hours.
- Add required salt to the batter and mix well.
- Heat a pan/ tawa on medium flame and pour a ladleful of batter into the hot tawa.
- When bubbles/ holes start appearing at the surface, cook it covered at low – medium flame.
- Remove the appam from the pan and transfer it to a plate. Repeat the same with the remaining batter.. Serve with any curry of your choice…
