Little Millet Mint Rice / Mint Millet Pulao

Ingredients:
1 cup little millet
1 cup mint leaves
1 inch ginger
5 garlic cloves
2-3 green chillies
1 large onion, sliced
2 cardamoms
2 cloves
1 piece of cinnamon
1 bay leaf
salt to taste
1 1/2 cup coconut milk
1 tbsp ghee / oil
Preparation:
- Wash and soak the little millet in water for 5-6 hours.
- Blend together mint leaves, ginger, garlic and green chillies to a fine paste adding little water and keep it aside.
- Heat ghee / oil in a pressure cooker and add bay leaf, cardamoms, cloves and cinnamon and saute for a minute.
- Add sliced onion and saute well until it turns lightly golden.
- Add the mint paste and mix well and cook for 2-3 minutes till the raw smell goes.
- Add the drained millet, coconut milk and salt and keep stirring until it starts boiling.
- Then pressure cook for 2-3 whistles and switch off the flame.
- Once the pressure releases, open the cooker and mix well.
- Garnish with fried cashew nuts and serve with raita...

Instructions

- 6Add drained millet, coconut milk, and salt, stirring until it starts boiling.
- 7Pressure cook for 2-3 whistles and let the pressure release naturally.
- 8Open the cooker, mix well, garnish with fried cashews, and serve with raita.
