Little Millet Mint Rice / Mint Millet Pulao

Ingredients:

1 cup little millet

1 cup mint leaves

1 inch ginger

5 garlic cloves

2-3 green chillies

1 large onion, sliced

2 cardamoms

2 cloves

1 piece of cinnamon

1 bay leaf

salt to taste

1 1/2 cup coconut milk

1 tbsp ghee / oil

Preparation:

  1. Wash and soak the little millet in water for 5-6 hours.
  2. Blend together mint leaves, ginger, garlic and green chillies to a fine paste adding little water and keep it aside.
  3. Heat ghee / oil in a pressure cooker and add bay leaf, cardamoms, cloves and cinnamon and saute for a minute.
  4. Add sliced onion and saute well until it turns lightly golden.
  5. Add the mint paste and mix well and cook for 2-3 minutes till the raw smell goes.
  6. Add the drained millet, coconut milk and salt and keep stirring until it starts boiling.
  7. Then pressure cook for 2-3 whistles and switch off the flame.
  8. Once the pressure releases, open the cooker and mix well.
  9. Garnish with fried cashew nuts and serve with raita...
