Ingredients:
15-18 vendakka / okra
3/4 -1 cup peanuts / ground nuts / kappalandi
2 big garlic cloves
1 cup grated coconut
1/2 tsp cumin seeds
1 onion, chopped
1-2 green chillies, chopped
1/2 tsp turmeric powder
1 tsp kashmiri chilli powder
1 tbsp urad dal
1 tbsp chana dal
1 tsp mustard seeds
3 dry red chillies
1 sprig curry leaves
salt to taste
2 tbsp coconut oil
Preparation:
- Wash and chop okra into round pieces.
- Grind together grated coconut, peanuts, garlic and cumin seeds into a coarse mixture and keep it aside.
- Heat coconut oil in a pan and splutter mustard seeds.
- Add urad dal, chana dal, dry red chillies and curry leaves and saute.
- Add chopped onion, green chilli, okra, turmeric powder and salt and saute well till cooked.
- Add chilli powder into this and mix well.
- Then add coconut mixture and cook covered at low flame for 3-4 minutes.
- Open the lid and mix well and saute until it is dry. Adjust the salt and switch off the flame.
