Afghan Cuisine

Ingredients:
4-5 hard boiled eggs
1/2 tsp chilli powder
1/4 tsp + 1/4 tsp turmeric powder
2 onions, sliced
1 tsp ginger
1 tsp garlic
2 green chillies
10-12 cashew nuts
1/2 cup + 2 tbsp fresh coriander leaves
2 cardamoms
2 cloves
2 cinnamon piece
1 tbsp pepper powder
1 tsp cumin powder
1 tsp garam masala
1/2 cup yogurt
1/4-1/2 cup fresh cream
1 tsp kasuri methi
salt to taste
1 tbsp butter
2 1/2 tbsp oil
Preparation:
- Heat 1 1/2 tsp oil in a pan and add chilli powder, 1/4 tsp turmeric powder and a pinch of salt and mix.
- Then add boiled eggs and lightly fry and keep it aside.
- Heat 1 tbsp oil in a pan and add sliced onions, ginger, garlic, green chillies and cashew nuts and saute until golden brown.
- Remove from the flame and allow to cool and then grind to a smooth paste adding coriander leaves and little water and keep it aside.
- In the same pan, heat 1 tbsp oil and butter and add cardamoms, cloves and cinnamon.
- Add the ground paste and stir well. Add little water and cook covered until the oil begins to separate.
- Add 1/4 tsp turmeric powder, pepper powder, cumin powder, garam masala and salt and mix well and cook until the raw smell goes.
- Add yogurt, fresh cream and kasuri methi and mix well. Adjust the water to the desired consistency.
- Cover and cook until the oil separates.
- Then gently add the fried eggs and chopped coriander leaves and cook at low flame for 3-4 minutes. Serve hot...
