Beef Arayes with Tahini Yogurt Sauce

Ingredients:


For Arayes:


6-7 pita breads

1/2 kg beef mince

1 large onion, minced

5-6 garlic cloves, minced

2 green chillies, minced

handful of parsley leaves, finely chopped

1 tsp pepper powder

1 tsp paprika

1 tsp garlic powder

olive oil, as required


For Tahini Yogurt Sauce:


1/2 cup yogurt

2 tbsp tahini

1 tbsp lemon juice

salt to taste

1 small garlic clove, minced

1-2 tbsp water


Preparation:


  1. In a mixing bowl, add beef mince, minced onion, garlic, green chillies, parsley, pepper powder, paprika, garlic powder and salt and mix with your hand until combined.
  2. Cut each pita in half and open them to form pockets.
  3. Stuff each pita pocket with 2-3 tbsp of mince mixture and spread evenly and then press down lightly to flatten.
  4. Heat a large frying pan on medium-low flame and spray with olive oil.
  5. Place the stuffed pitas open-side (meat side) down first and cook for 2 minutes until browned.
  6. Then flip and cook for 4-5 minutes on each side, pressing down lightly with a spatula until the pitas are crisp and golden and the beef is fully cooked.
  7. Serve warm with tahini yogurt sauce..


For Tahini Yogurt Sauce:


  1. In a bowl, add yogurt and tahini and whisk together until smooth.
  2. Then add lemon juice, minced garlic and salt and mix well.
  3. Stir in 1-2 tbsp water gradually until it reaches the required consistency.


  • You can also cook in the air fryer - Brush / spray the stuffed pitas with olive oil and air fry for 6-8 minutes, turning halfway, at 200 degree celcius until crispy and golden.
