Beef Arayes with Tahini Yogurt Sauce

Ingredients:
For Arayes:
6-7 pita breads
1/2 kg beef mince
1 large onion, minced
5-6 garlic cloves, minced
2 green chillies, minced
handful of parsley leaves, finely chopped
1 tsp pepper powder
1 tsp paprika
1 tsp garlic powder
olive oil, as required
For Tahini Yogurt Sauce:
1/2 cup yogurt
2 tbsp tahini
1 tbsp lemon juice
salt to taste
1 small garlic clove, minced
1-2 tbsp water
Preparation:
- In a mixing bowl, add beef mince, minced onion, garlic, green chillies, parsley, pepper powder, paprika, garlic powder and salt and mix with your hand until combined.
- Cut each pita in half and open them to form pockets.
- Stuff each pita pocket with 2-3 tbsp of mince mixture and spread evenly and then press down lightly to flatten.
- Heat a large frying pan on medium-low flame and spray with olive oil.
- Place the stuffed pitas open-side (meat side) down first and cook for 2 minutes until browned.
- Then flip and cook for 4-5 minutes on each side, pressing down lightly with a spatula until the pitas are crisp and golden and the beef is fully cooked.
- Serve warm with tahini yogurt sauce..
For Tahini Yogurt Sauce:
- In a bowl, add yogurt and tahini and whisk together until smooth.
- Then add lemon juice, minced garlic and salt and mix well.
- Stir in 1-2 tbsp water gradually until it reaches the required consistency.
- You can also cook in the air fryer - Brush / spray the stuffed pitas with olive oil and air fry for 6-8 minutes, turning halfway, at 200 degree celcius until crispy and golden.
