Ingredients:
1 cup raw rice
3-5 green chillies
1/4 tsp asafoetida
1 tsp cumin seeds
salt to taste
oil, for frying
Preparation:
- Wash and soak the raw rice in water for 30 minutes.
- Grind green chillies to a paste and keep it aside.
- In a pressure cooker, add drained rice, green chilli paste, asafoetida, cumin seeds, salt and 3 cups of water and mix well and then pressure cook it for 2 whistles.
- Once the pressure releases, open the cooker and mash it well using a wooden spatula when it is still hot. Then allow to cool completely.
- Take a murukku press / mould, use the star shaped disc and fill it with the cooled rice dough.
- Then squeeze / press it on a sheet lined with parchment paper / cotton cloth.
- Dry them in the sun for 2-3 days or until crisp. Store in an air tight container.
- To fry, heat oil in a pan and deep fry them at medium flame till it puffs up completely and crisp.
- Drain on kitchen paper and serve with lunch or as a snack...
